Chicken with Spinach Couscous

15g (1/2oz) Flora Original spread
1 medium red onion, finely sliced
1 teaspoon grated root ginger
1 red pepper, sliced
4 boneless and skinless chicken breasts, thinly sliced
2 tablespoons each honey and soy sauce
150ml water
Juice of 1 lemon
55g (2oz) baby spinach leaves
1 teaspoon cornflour
140g (5oz) couscous
  1. Heat the Flora Original spread in a pan and add the onion, ginger, pepper and chicken and cook for 5-10 minutes.
  2. Add the honey, soy sauce, water and lemon juice and simmer for 10 minutes until chicken is cooked through.
  3. Add the spinach to the pan and simmer for 3 minutes until spinach has wilted.
  4. Add the cornflour blended with a little water and cook until thickened.
  5. Meanwhile cook the couscous according to the instructions on the packet.
  6. Serve the couscous with the chicken.
