Vegetable Frittatas

40g (1½oz) Flora Original spread
6 spring onions, sliced
2 courgettes, sliced
2 rashers lean bacon, chopped
2 tomatoes, sliced
55g (2oz) curly kale
4 eggs high in Omega 3
1 tablespoon each of fresh basil and mint
  1. Melt the Flora Original spread in a non-stick frying pan.
  2. Add the onions, courgettes, chopped bacon, tomatoes and kale to the pan and cook until just tender, about 5 minutes.
  3. Beat the eggs lightly and then add the basil and mint to the egg mixture.
  4. Lightly brush a 23cm (9 inch) pie plate with oil.
  5. Using a large spoon, place the vegetables in the pie plate and then pour the egg mixture over the top.
  6. To bake, place in the pre-heated oven at 190°C, 375°F, Gas 5 for 20-25 minutes or until the mixture sets.
  7. Allow your Vegetable Frittata to cool for 5 minutes.
  8. Slice into wedges and serve with salad or baked beans.
