Vegetarian Sausages with Stir Fry Veg

40g (1½oz) Flora Original spread
8 vegetarian sausages
200g (7oz) passata
150ml (¼ pint) water with ½ teaspoon Marmite yeast extract to make stock
1 teaspoon cornflour
115g (4oz) mixed mushrooms
4 cherry tomatoes, halved
2 carrots, cut into thin strips
Small yellow pepper, cut into strips
55g (2oz) French beans, halved
115g (4oz) cabbage, sliced
  1. Heat a pan then add half of the Flora Original spread.
  2. Add the chopped onion and sausages and cook until the onion is soft.
  3. Add the passata and stock to the pan of sausages and onions, stirring, until the sauce comes to the boil.
  4. Reduce the heat and simmer for about 15 minutes until the sausages are cooked.
  5. Mix the cornflour with a little water and then add to the pan.
  6. Bring to the boil until slightly thick.
  7. Heat the remaining Flora Original spread in a wok or large frying pan and stir fry the vegetables for 3-5 minutes until lightly cooked.
  8. Cut each sausage into 4 and serve with the sauce and stir fried vegetables.
